Obbattu or sweet patty is a delicious, filling, and quite easy to make recipe. This obbattu recipe is all about transforming tasty jackfruit seeds into something tastier – golden, little crispy on the outside and soft, and flavourful on the inside.
Once the jackfruit seeds are cooked soft, all you have to do is grind them with jaggery and cardamom seeds, form them into patties, and roast them. Fresh ghee can be spread on a pan when roasting obbattu. Using ghee is optional and obbattu can be dry roasted.

Step by step guide
1. Take jackfruit seeds. Take each of them in a mortar and smash with a pestle.
2. Remove the cover.
3. Wash the seeds thoroughly.
4. Add water as needed, and cook them to a very smooth texture. Let it cool.
Cook the seeds really well. Uncooked seeds are difficult to grind.
5. Remove, and rinse cardamom seeds.
6. Now, add the cooked seeds, Jaggery, and cardamom seeds to a mixer jar.
7. Grind them to a smooth paste. Take the ground mix in a cooking bowl or pan and heat the ground paste on low to medium flame. Stir continuously.
Note that the ground mix should be smooth enough to shape them.
8. Cook until the paste turns thick but smooth dough. Let it cool for few minutes.
9. Then, take a portion of the dough and shape into a ball.
10. Then flatten with your palm and shape into patty / obbattu.
11. Heat a tava and place a shaped patty / obbattu on the heated tava.
Optionally you can spread a few drops of fresh ghee on heated tava before roasting obbattu.
12. Turn over using a turner or spatula when obbattu turns golden or light brown at the bottom. Remove when both the sides are well roasted.
13. Enjoy them hot with fresh ghee. Ghee is optional.
