Gajari kosambri | Carrot salad

This colourful and lightly sweet carrot kosambri is made with freshly grated fresh carrot, green gram, lemon juice, green chilli, salt, and flavoured with coriander leaves.  Enjoy this simple and lovely kosambri with meals or as a snack.

  • 1 cup grated carrot – tightly packed

  • 1 tablespoon green gram (Hesaru kalu or moong)
  • 1 green chilli
  • 2 teaspoons lemon juice
  • Few coriander leaves
  • Salt as required

How to make gajari kosambri or carrot salad
  • Rinse and soak the green gram for about 4 to 5 hours or overnight.
  • Drain the water and keep aside.
  • Wash and grate the carrot(s) – 1 cup tightly packed.
  • Add soaked green gram.
  • Chop and add green chilli and coriander leaves. Mix everything.
  • Add salt as required and mix well.
  • Add lemon juice, mix well and serve fresh.

Step by step guide

How to make gajari kosambri or carrot salad

1. Rinse and soak the green gram for about 4 to 5 hours or overnight.

2. Drain the water and keep aside.

3. Wash and grate the carrot(s) – 1 cup tightly packed.

4. Add soaked green gram.

5. Chop and add green chilli and coriander leaves. Mix everything.

6. Add salt as required and mix well.

7. Add lemon juice, mix well and serve fresh.

Notes

  • Add lemon juice after adding and mixing salt to the kosambri. Adding lemon juice before salt may make kosambri taste bitter.

  • Add salt, lemon juice, and green chilli as per your taste.
