Indian gooseberries salt preserve

Nellikaayi or Amlaki or Amla is Indian gooseberry and is seasonal. As these berries are seasonal, these are preserved in various ways to relish for a couple of months. And one way to preserve these berries is in salt. These salt preserved gooseberries are usually consumed as is, but can also be made pickle.

Ingredients

  • 1 kg Indian gooseberries (Bettada Nellikaayi or Amla)

  • 1 cup salt
  • 2 or 3 green chillies
  • 2 cups water

Cookware / Utensils

  • Bowl

  • Large Bharani (A jar made of mud / clay / ceramic)

How to preserve Indian gooseberries in salt
  • Wash the berries until clean. If bought from market soak them in salt water for some time and rinse.
  • Add 1 cup salt.
  • Take 2 to 3 green chillies in a mortar and pestle.
  • Crush them.
  • Add crushed chillies to the berries.
  • Mix well.
  • Transfer them to a clean jar. Add 2 cups of water.
  • Close the lid and keep aside for 2 days.
  • After 2 days, mix the berries again.
  • After 3 to 4 days theses berries can be consumed as required.

How to preserve Indian gooseberries in salt

1. Wash the berries until clean. If bought from market soak them in salt water for some time and rinse.

2. Add 1 cup salt.

3. Take 2 to 3 green chillies in a mortar and pestle.

Note: I have used tiny chilli. Any available chilli can be used.

4. Crush them.

5. Add crushed chillies to the berries.

6. Mix well.

7. Transfer them to a clean jar. Add 2 cups of water.

8. Close the lid and keep aside for 2 days.

9. After 2 days, mix the berries again.

10. After 3 to 4 days theses berries can be consumed as required.

Notes

  • Salt preserved Indian gooseberries stays good for a month. It can be preserved for more than a month but tastes too salty. So it is better to use them within a month.

  • After 15 days, if you see a white layer on top of salt water, please replace the salt water.
  • These preserved berries can be consumed as is or can be used to make pickle.
