Sole means pulp or bulb of a fruit. Here sole refers to naturally preserved raw jackfruit pulp. During jackfruit season raw jackfruit is preserved and many unique and delicious dishes are made for next couple of months. As I mentioned in one of the jackfruit recipes, a specific jackfruit is used for a specific dish and so is for preserving. This jackfruit is called Sole kaayi. Sole is bulb and kaayi is any raw or unripe fruit or vegetable. So here, Sole Kaayi is unripe jackfruit that is fit to preserve. Not all jackfruit can be preserved for a longer period.
Salt is used to preserve raw jackfruit. Though many keep Sole for more than six months, I prefer to keep not more than three or four months. After this jackfruit may become little soggy. Please see notes for usage.

Instructions
Step by step guide
1. Get a fresh unripe jackfruit and wash with water.
2. Remove the skin and cut into pieces.
3. Separate the pulp / bulb and remove the seeds.
4. Take the pulp in a large bowl.
5. Add salt and mix well.
6. Transform the salt mixed jackfruit pulp to a jar.
7. Close the lid.
8. Tie a clean cloth over the lid.
9. After two days it is ready to use.
Raw Jackfruit should be preserved on the same day when you pick it from the tree.
