Maavinakaayi or raw mango tambli is seasonal as it requires a fresh raw (unripe) mango. This summer special tambli makes lunch cool when the sun is burning outside. Mango tambli recipe is simple and straightforward to make and at the same time it is a soothing side dish for rice with its mixed aroma of fresh raw mango, coconut, and spices.

Step by step guide
1. Grate ½ cup fresh coconut.
2. Rinse, peel, and chop mango.
3. Add grated coconut, chopped mango, green chilli, and 5-6 curry leaves to a mixer jar.
4. Add water as required, and grind them to smooth puree.
5. Take the ground puree in a bowl.
6. Add 1 cup fresh buttermilk and mix well.
7. Add salt as required. Mix well.
8. Heat 1 teaspoon of oil in a small pan. Add 1 pinch asafoetida, ½ teaspoon mustard seeds. Let the mustard seeds crackle. Then add 1 pinch turmeric powder, 5-6 curry leaves.
9. Add the tempering to tambli. Mix well and serve with plain rice.
Use less to medium sour mango to make mango tambli.
