Shrikhanda or Shrikhand is a simple, cooling, and refreshing dessert made of hung curd (a homemade curd drained of any whey), sugar, and flavoured with cardamoms and optionally with saffron. With few ingredients, you can turn simple homemade curd (yogurt) into a tastiest treat around.
Though I am not much fond of this dreamy, creamy dessert, I have a very fond memory of my granny hanging curd in the pooja room. As there used to be homemade curd in abundant, this thick curd dish was a favourite side with tellevu (thin pancake) during breakfasts.
To make traditional shrikhand, homemade fresh curd is hung for 4 to 5 hours or overnight to drain off the whey. Then sugar is added to this hung curd and whisked until creamy.
