This delightful kesari or kesar or saffron milk is a sweet drink flavoured with ground saffron, cardamoms, and almonds. Almonds are soaked overnight, peeled, and ground along with saffron and cardamoms and then added to boiled cow’s milk. This traditional tasty beverage is enjoyable all year round either hot or cold depending on the season.

Step by step guide
1. Rinse and then soak almonds in room temperature water overnight.
2. Peel the almonds.
3. Remove cardamom seeds and rinse them.
4. Add peeled almonds, saffron strands, cardamom seeds, and sugar in a mixer or blender.
If you want you can keep few saffron strands for garnishing.
5. Add 2 tablespoons of milk.
6. Grind to a fine consistency.
7. Pour the ground mixture to the remaining milk. Mix well.
8. Heat the saffron milk on a low or medium heat. Stir at intervals.
Switch off the heat when the milk becomes hot and starts boiling.
9. Serve saffron milk hot or warm.
Milk can be either whole milk or boiled milk.
